1Prepare all ingredients. Slice ginger, garlic, and scallions. Cut Napa cabbage and spinach into bite-sized pieces. Slice potato thinly.
2Heat vegetable oil in a large pot or wok over medium heat. Add sliced ginger, sliced garlic, and sliced scallions. Stir-fry until fragrant.
3Add star anise, Sichuan peppercorns, and dried chilies. Continue to stir-fry for 1-2 minutes until aromatic, being careful not to burn the dried chilies.
