1To prepare the Uttapam batter, rinse 200g Raw rice and 50g Urad dal separately. Soak the Raw rice with 5g Fenugreek seeds in 500g Water for at least 4 hours. Soak the 50g Urad dal in 200g Water separately for at least 4 hours.
2After soaking, drain the water from the Urad dal and grind it into a very smooth, fluffy paste using a minimal amount of fresh Water. Transfer to a large bowl.
3Drain the water from the Raw rice and Fenugreek seeds. Grind them into a slightly coarse paste, adding fresh Water as needed. Combine this rice paste with the Urad dal paste in the large bowl.
