1Preheat your oven to 200°C and season the 1200g lamb saddle generously with 10g salt and 3g pepper.
2Heat 30g olive oil in a roasting pan and sear the lamb saddle on all sides until golden brown.
3Add 20g garlic and 5g thyme to the pan, then roast the lamb in the oven for 20 minutes until medium-rare.
