Horenso Gomae (Spinach with Sesame Dressing)

Bring 1000g water to a rolling boil in a large pot.

Wash 300g Spinach thoroughly. Blanch the Spinach in the boiling water for 30-60 seconds until vibrant green and slightly tender.

Immediately transfer the blanched Spinach to an ice bath to stop cooking.
