11. Rinse the Beef leg bones and Beef brisket thoroughly under cold running water. Place the Beef leg bones and Beef brisket in a large pot and cover with 3000g of Water. Let them soak for 3-4 hours, changing the Water every hour to remove impurities and blood.
22. Drain the soaking Water. Place the Beef leg bones and Beef brisket back into the clean pot. Add another 3000g of fresh Water, bring to a rolling boil over high heat, and boil for 10-15 minutes. This step, called blanching, helps remove more impurities and the strong odor.
33. Carefully remove the Beef leg bones and Beef brisket from the pot. Discard the blanching Water. Rinse the Beef leg bones and Beef brisket again under cold running water, scrubbing any remaining impurities or coagulated blood from the bones.
