11. Thoroughly clean the Pork femurs. Blanch Pork femurs in boiling Water for 10 minutes, then drain and rinse well to remove impurities.
22. Place cleaned Pork femurs, Pork back fat, Yellow onions, 50 grams of Garlic cloves, 50 grams of Ginger, and Leek green parts in a large stock pot.
33. Add enough Water to cover all ingredients by several centimeters. Bring to a rolling boil, then reduce heat to a vigorous simmer. Skim off any scum that rises to the surface continuously for the first hour.
