1Rinse dried black beans thoroughly. Place them in a large bowl, cover with plenty of water, and soak overnight, or quick soak by boiling for 1 minute and letting sit for 1 hour.
2Drain the soaked dried black beans. Place them in a large pot with 75 grams of white onion, 15 grams of garlic cloves, and 1000 grams of water. Bring to a boil, then reduce heat and simmer until the dried black beans are very tender, about 1.5 to 2 hours.
3In a separate medium pan, heat 15 grams of vegetable oil over medium heat. Add the remaining 75 grams of white onion and 15 grams of garlic cloves. Sauté until softened and translucent, about 5-7 minutes.
