Carefully clean the Beef brains by removing any visible membranes and blood vessels under cold running water. Cut the White onion into halves and peel the Garlic cloves.

In a pot, bring about 2 liters of water to a boil with one half of the White onion, 10 grams of Garlic cloves, 1 gram of Bay leaf, and 5 grams of Salt. Add the cleaned Beef brains and simmer for 20-25 minutes, or until the Beef brains are firm to the touch. Drain and let them cool completely.

While the Beef brains cool, prepare the salsa. Roast the Tomatillos and Serrano chiles on a comal or dry skillet over medium heat until softened and lightly charred on all sides. Peel the remaining 10 grams of Garlic cloves.
