1Boil the Potatoes until tender. Once cooled, peel and mash them thoroughly, ensuring no large lumps remain.
2Heat 15 grams of Vegetable oil in a small pan for tempering. Add Mustard seeds and allow them to splutter. Then add Cumin seeds, Ginger-garlic paste, Green chili, Curry leaves, and 1 gram of Asafoetida. Sauté for a minute until fragrant. Stir in 3 grams of Turmeric powder and cook for 30 seconds.
3Pour the prepared tempering mixture over the mashed Potatoes. Add Fresh cilantro, Lemon juice, and 8 grams of Salt. Mix everything well to combine, ensuring the spices are evenly distributed throughout the potato mixture.
