1Rinse 300 grams of Idli rice, 100 grams of Urad dal, and 5 grams of Fenugreek seeds thoroughly. Soak them together in sufficient water for 6 hours.
2Drain the soaked Idli rice, Urad dal, and Fenugreek seeds. Grind them in a wet grinder or high-speed blender with 400 grams of Water, adding more if needed, until a smooth, thick batter is formed.
3Transfer the batter to a large bowl, add 10 grams of Salt, and mix well. Cover and let it ferment in a warm place for 8-12 hours, or until it doubles in volume and becomes slightly sour.
