1Rinse the Pork ribs thoroughly. Place the Pork ribs in a large pot, cover with cold Water, and bring to a boil. Skim off any foam and impurities that rise to the surface. Continue to boil for 5 minutes, then drain the Pork ribs and rinse them under cold running water to remove any remaining scum.
2Prepare the Lotus root by peeling and cutting it into 2cm thick rounds. Slice the Ginger. Pit the Dried red dates. Rinse the Dried goji berries.
3In a large, clean heavy-bottomed pot, combine the blanched Pork ribs, Lotus root, sliced Ginger, and pitted Dried red dates.
