1Wash the Winter Melon thoroughly. Carefully peel off the tough outer skin using a sturdy peeler or knife. Cut the Winter Melon in half, scoop out and discard the seeds and fibrous core. Cut the peeled and deseeded Winter Melon into approximately 2-inch chunks.
2In a large, heavy-bottomed pot, combine the prepared Winter Melon chunks, Rock Sugar, and Dried Longan.
3Pour the Water into the pot, ensuring all ingredients are submerged. Bring the mixture to a boil over high heat.
