1Dice the Zucchini into small cubes. Finely chop the White onion and Garlic cloves. Remove the seeds and finely mince the Serrano chile.
2In a large pot, heat the Vegetable oil and Unsalted butter over medium heat. Add the chopped White onion and cook until softened and translucent, about 5 minutes.
3Add the minced Garlic cloves and Serrano chile to the pot and cook for another 2 minutes until fragrant, being careful not to burn the garlic.
