1Prepare Daqu: Wheat is crushed, mixed with a small amount of Water, formed into bricks, and allowed to ferment and cultivate beneficial microorganisms in a controlled environment for several weeks to create the starter culture.
2Steam Sorghum: Sorghum grains are thoroughly cleaned, soaked in Water, and then steamed until partially cooked to gelatinize the starches, making them accessible for fermentation.
3Cool and Mix: The steamed Sorghum is cooled to an optimal temperature and then thoroughly mixed with a portion of the prepared Daqu starter culture.
