1Place 10g Kombu and 800g Water in a pot and let it soak for 30 minutes.
2Heat the pot over medium heat. Just before the Water boils, remove the Kombu.
3Add 15g Katsuobushi to the hot Water, bring to a gentle simmer, then turn off the heat. Let the Katsuobushi steep for 5 minutes.
