1Rinse azuki beans thoroughly. Place azuki beans in a large pot and cover with plenty of water. Bring to a boil over high heat, then drain the water. This step removes bitterness.
2Return the azuki beans to the pot, cover with fresh water (about 3 times the volume of beans). Bring to a boil, then reduce heat to low and simmer for 15 minutes. Drain the water again.
3Add fresh water to the pot, ensuring azuki beans are fully submerged. Bring to a boil, then reduce heat to very low. Simmer gently for 1.5 to 2 hours, or until azuki beans are very soft and can be easily crushed between your fingers. Add more hot water if needed to keep beans submerged.
