1Drain extra-firm tofu, press out excess water for 20 minutes, then cut into 2cm cubes.
2Mince garlic and fresh ginger. Roughly chop dried red chilies. Rinse fermented black beans and finely chop. Slice scallions, separating white and green parts.
3Heat 30g vegetable oil in a wok over medium-high heat. Add tofu cubes and pan-fry until golden brown and slightly crispy on all sides. Remove tofu from wok and set aside.
