1. Wash the Japanese short-grain rice thoroughly under cold running water until the water runs clear, then drain well.
2. Place the washed Japanese short-grain rice into a rice cooker pot or a heavy-bottomed pot.
3. In a separate bowl, combine the Kombu dashi, Usukuchi soy sauce, Mirin, Sake, and Salt. Stir until the salt is dissolved.
