1Rinse the Chinese sauerkraut thoroughly under cold water, then squeeze out excess liquid. Chop the rinsed Chinese sauerkraut into 2cm pieces.
2Slice the pre-cooked pork intestine into 1.5cm thick rings.
3Peel and slice the ginger into thin pieces. Peel and mince the garlic. Cut the white parts of the scallions into 3cm sections and chop the green parts for garnish later.
