1Rinse the pork spare ribs thoroughly under cold water, then pat dry with paper towels. Cut the ribs into 3-4cm pieces.
2Blanch the pork spare ribs in boiling water for 2-3 minutes to remove impurities. Drain and rinse again under cold water, then pat dry.
3Rinse the fermented black beans and lightly mash them with the back of a knife or a fork.
