1Thoroughly clean the whole chicken, removing any internal organs and excess fat. Tuck the chicken's head under one wing and cross its legs, tucking them into the cavity to form a compact shape.
2In a large wok or pot, heat the vegetable oil to 170°C.
3Brush the entire surface of the whole chicken with a small amount of dark soy sauce to achieve an even, rich color.
