1Clean the Squid thoroughly, removing the internal organs, beak, and skin. Cut the body into rings and the tentacles into manageable pieces.
2Peel the Potatoes and cut them into approximately 2cm cubes.
3In a large, heavy-bottomed pot or Dutch oven, heat the Extra-virgin olive oil over medium heat. Add the Garlic and Red pepper flakes and sauté gently until the Garlic is fragrant and lightly golden, about 2-3 minutes. Do not let the Garlic burn.
