1Sift 200 grams of All-purpose flour and 2 grams of Salt into a large bowl.
2Add 100 grams of cold, cubed Unsalted butter to the flour mixture. Using your fingertips, rub the butter into the flour until the mixture resembles coarse sand.
3Stir in 50 grams of Granulated sugar. Add 20 grams of Egg yolk and mix until the dough just comes together. Avoid overworking the dough.
