Prepare the broth: In a pot, combine 1000g Water, 5g Dried kelp, and 10g Dried anchovies. Bring to a boil, then reduce heat and simmer for 15 minutes. Remove the Dried kelp and Dried anchovies. Let the broth cool completely, then refrigerate for at least 1 hour until thoroughly chilled.

Season the chilled broth: To the cold broth, add 30g Soy sauce (for broth), 20g Rice vinegar (for broth), 10g Sugar (for broth), 5g Minced garlic (for broth), and 5g Sesame oil (for broth). Stir well to combine and dissolve the Sugar.

Prepare the dotorimuk: Rinse 400g Dotorimuk under cold water. Slice the Dotorimuk into thin, noodle-like strips, approximately 0.5 cm wide and 5 cm long.
