1Bring a pot of water to a boil. Add the sliced Lotus Root and a pinch of Salt, blanch for 2 minutes until slightly tender-crisp, then drain well and set aside.
2Heat a wok over high heat until smoking. Add the Vegetable Oil and swirl to coat the wok surface.
3Add the Dried Chili, minced Garlic, and minced Ginger to the hot oil. Stir-fry for 15 seconds until fragrant.
