Pat the Pork belly dry with paper towels. If the Pork belly is very thick, slice it into approximately 1.5 cm thick pieces. Season both sides of the Pork belly generously with Salt and Black pepper.

Prepare the ssamjang (dipping sauce): In a small bowl, combine Doenjang, Gochujang, Sesame oil, Minced garlic, Toasted sesame seeds, and Sugar. Mix well until all ingredients are thoroughly combined.

Prepare the fresh vegetables: Wash the Green leaf lettuce and Perilla leaves thoroughly and pat them dry. Slice the King oyster mushrooms lengthwise into 1 cm thick pieces. Peel and slice the Yellow onion into thick rings. Peel the Garlic cloves but leave them whole.
