Slice the Beef flank steak thinly against the grain into bite-sized pieces. In a bowl, combine the sliced Beef flank steak with 20g Light soy sauce, Dark soy sauce, 15g Shaoxing wine, Sesame oil, White pepper, and 10g Cornstarch. Mix well and let marinate for at least 15 minutes.

Cut the Bitter melon in half lengthwise, scoop out the seeds and the white pith using a spoon. Slice the Bitter melon into approximately 0.5cm thick crescent shapes.

Bring 1000g Water for blanching to a rolling boil in a pot. Add the sliced Bitter melon and 5g Salt. Blanch for 1-2 minutes until the Bitter melon turns bright green but is still firm. Drain immediately and rinse under cold water to stop cooking and preserve color. Set aside.
