1Gently clean the fiori di zucca, carefully removing the pistil from inside and any tough parts of the stem. Be very careful not to tear the delicate flowers.
2Drain the mozzarella di bufala and pat it thoroughly dry with paper towels. Cut the mozzarella di bufala into small cubes. Drain the acciughe sott'olio and finely chop them.
3Carefully open each fiori di zucca and place a small cube of mozzarella di bufala and a tiny piece of chopped acciughe sott'olio inside. Gently twist the top of the flower to seal it.
