11. Prepare the broth: In a large pot, combine 2000g Water, Dried anchovies, and Dried kelp. Bring to a boil over high heat, then reduce heat to medium-low and simmer for 20 minutes. Remove and discard the Dried anchovies and Dried kelp, leaving only the clear broth.
22. Prepare vegetables: Wash and slice the Zucchini into half-moon shapes. Peel and slice the Potato into thin, bite-sized pieces. Peel and slice the Onion thinly. Clean and slice the Shiitake mushrooms. Chop 40g of the Green onion into 5cm lengths and finely chop the remaining 10g for garnish.
33. Clean the Clams: Soak the Clams in salted water for 30 minutes to purge any sand, then rinse thoroughly under cold running water.
