1Rinse 250g hulled mung beans thoroughly under cold water until the water runs clear.
2Place the rinsed hulled mung beans in a large bowl, cover with 500g cold water, and soak for at least 4 hours or preferably overnight.
3Drain the soaked hulled mung beans and transfer them to a heatproof dish. Place the dish in a steamer basket.
