1Bring a large pot of salted water to a rolling boil. Add the Macaroni and cook according to package directions until al dente. Drain the Macaroni thoroughly and set aside to cool slightly.
2While the Macaroni cooks, crack the Eggs into a large bowl. Whisk vigorously until well combined. Grate the Parmigiano-Reggiano and Pecorino Romano into the Eggs. Add the Black pepper and mix well.
3Dice the Prosciutto cotto into small cubes. Dice the Mozzarella into small pieces.
