1Rinse the pre-cooked pork intestines thoroughly and slice them into 1.5 cm thick rings or strips.
2Slice the green bell pepper and red bell pepper into thin strips. Mince the garlic and ginger. Slice the fresh red chilies into thin rounds. Chop the scallions into 3 cm lengths, separating white and green parts.
3Heat a wok over high heat until smoking. Add the cooking oil, swirling to coat the wok surface.
