1Carefully remove thorns and eyes from the Nopales using a sharp knife. Cut the Nopales into 1.5 cm squares.
2Place the cut Nopales in a pot with 50g of White onion (roughly chopped) and 5g of Fine sea salt. Cover with water and bring to a boil. Cook for 15-20 minutes until the Nopales are tender and the mucilage has reduced. Drain the Nopales thoroughly and rinse under cold water. Set aside.
3Remove husks from the Tomatillos. Wash the Tomatillos, Serrano peppers, and Fresh cilantro.
