1Soak the Thin rice vermicelli in hot water for 5-7 minutes until pliable but still firm. Drain thoroughly and set aside.
2In a bowl, marinate the Shrimp with 1g Salt, 5g Shaoxing wine, and the Cornstarch. Mix well and set aside for 10 minutes.
3Prepare the sauce by combining the Light soy sauce, Dark soy sauce, 10g Shaoxing wine, Oyster sauce, Sugar, and White pepper in a small bowl. Mix well.
