1Carefully peel the outer layers from the Lampascioni, trim the root end, and make a small cross incision at the base of each bulb.
2Place the prepared Lampascioni in a large bowl and cover them completely with cold water. Let them soak for at least 8 hours, or preferably overnight, changing the water two or three times to help reduce their natural bitterness.
3Drain the Lampascioni and rinse them thoroughly under cold running water.
