1Wash the Bergamot thoroughly. Using a vegetable peeler or a sharp knife, carefully peel the zest from the Bergamot in long strips, avoiding the white pith as much as possible.
2Cut the peeled Bergamot zest into thin strips, approximately 2-3 mm wide and 3-4 cm long.
3Place the Bergamot zest strips in a large bowl and cover with cold Water. Let them soak for at least 12 hours, changing the Water several times to reduce bitterness.
