1Soak the Tteokbokki tteok in cold water for 15 minutes to soften. Drain well.
2Dice the Pork belly into 1.5 cm cubes. Roughly chop the Onion, Cabbage, Zucchini, and Potato into bite-sized pieces. Mince the Garlic and Ginger. Slice the Green onion thinly for garnish.
3Heat 20g of Vegetable oil in a large pan or wok over medium-high heat. Add the diced Pork belly and stir-fry until browned and some fat has rendered, about 5-7 minutes. Remove the Pork belly from the pan and set aside, leaving the rendered fat in the pan.
