1. Rinse the Beef tripe thoroughly under cold water. Scrub with salt if desired, then rinse again. Cut the Beef tripe into 2-3 cm squares.

2. Place the Beef tripe and Cow's trotters in a large pot. Cover with plenty of water and add half of the White onion and half of the Garlic cloves. Bring to a boil, then reduce heat and simmer for 30 minutes. Drain the water and rinse the Beef tripe and Cow's trotters again. This step helps to remove impurities and strong odors.

3. Return the cleaned Beef tripe and Cow's trotters to the pot. Add fresh water to cover, along with the remaining half of the White onion, remaining half of the Garlic cloves, and 15 grams of Salt. Bring to a boil, then reduce heat to low, cover, and simmer for 3-4 hours, or until the Beef tripe and Cow's trotters are very tender. Skim any foam that rises to the surface.
