1. Soak the dried chickpeas in plenty of water overnight. Drain and rinse thoroughly.

2. Place the soaked chickpeas in a large pot, cover with fresh water, and bring to a boil. Reduce heat and simmer until the chickpeas are very tender, about 60-90 minutes. Drain well, reserving about 50g of the chickpea cooking liquid.

3. While the chickpeas are cooking, finely dice the red onions.
