1In a large mixing bowl, combine Maida, Ghee (30 grams), and Salt. Rub the Ghee into the Maida until the mixture resembles breadcrumbs.
2Gradually add Water (100 grams) to the Maida mixture and knead to form a stiff, smooth dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
3For the filling, dry roast Semolina in a pan over medium heat until it turns light golden and fragrant. Remove and set aside.
