1Soak the Almonds in hot water for 30 minutes, then drain, peel off their skins, and pat them dry completely.
2Grind the peeled Almonds into a very fine paste using a food processor, adding a tiny splash of Water if necessary to aid grinding, but keep it as thick as possible.
3In a heavy-bottomed pan, combine the Granulated Sugar and 100 grams of Water. Heat over medium flame, stirring until the Granulated Sugar dissolves completely.
