1In a large mixing bowl, sift the Maida and Baking soda together.
2Add the Ghee to the Maida mixture and rub it gently with your fingertips until the mixture resembles coarse crumbs.
3Add the Yogurt and 50 grams of Water to the crumbly mixture. Mix very gently using your fingers to bring the dough together. Do not knead the dough; it should remain shaggy and flaky. Cover the dough with a damp cloth and let it rest for 20 minutes.
