1Wash the Jasmine rice thoroughly under cold running water until the water runs clear. Soak the washed Jasmine rice in cold water for at least 30 minutes.
2Dice the Chicken thigh with bone into 2-3 cm pieces. In a bowl, marinate the diced Chicken thigh with bone with Shaoxing wine, 5 grams of Light soy sauce, and 1 gram of White pepper. Mix well and set aside.
3Peel and slice 20 grams of Ginger thinly. Slice 20 grams of Scallion into 2 cm segments. Julienne the remaining 10 grams of Ginger and finely chop the remaining 30 grams of Scallion for garnish.
