Clean the Squid thoroughly by removing the internal organs, beak, eyes, and outer membrane. Rinse well under cold water and pat dry with paper towels. Score the body of the Squid in a crosshatch pattern without cutting all the way through.

In a mixing bowl, combine the Light soy sauce, Shaoxing wine, thinly sliced Fresh ginger, minced Garlic, White pepper, and Sesame oil. Add the cleaned Squid to the marinade, ensuring it is fully coated. Marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.

Preheat a charcoal grill or a grill pan to medium-high heat. If using a charcoal grill, ensure the coals are glowing with a light ash coating.
