Hazırlanışı
1Scrub the Gobo thoroughly under cold running water to remove any dirt. Lightly scrape the skin with the back of a knife or a peeler, ensuring not to remove too much of the flavorful skin.
2Cut the Gobo into thin julienne strips, approximately 5cm in length.
3Immediately place the julienned Gobo into a bowl of water containing 5g of Rice vinegar for 10 minutes. This prevents discoloration and helps remove any astringency.
