1Soak the dried day lily and dried black fungus in warm water for 20 minutes until rehydrated. Drain, then knot the dried day lily and shred the dried black fungus.
2Soak the mung bean vermicelli in warm water for 10 minutes until softened. Drain and cut into shorter segments.
3Thinly slice the beef and ginger. Chop a small portion of scallion for cooking, reserving the rest for garnish.
