1Prepare the dashi: Wipe Kombu gently with a damp cloth. Place Kombu and 1000g Water in a pot. Heat over medium-low heat, just below simmering for 15 minutes.
2Remove the Kombu from the pot just before the Water boils. Increase heat to medium-high and bring the Water to a boil.
3Add Katsuobushi to the boiling Water. Turn off the heat immediately and let the Katsuobushi steep for 5 minutes.
