Combine the rinsed Japanese short-grain rice and Water in a rice cooker or heavy-bottomed pot. Cook according to manufacturer's instructions or until all Water is absorbed and rice is tender.

While the rice cooks, prepare the sushi vinegar: In a small saucepan, combine Rice vinegar, Granulated sugar, and Sea salt. Heat gently over low heat, stirring until Granulated sugar and Sea salt are fully dissolved. Do not boil. Let cool to room temperature.
