1Thoroughly wash the glutinous rice under cold running water until the water runs clear. Soak the washed glutinous rice in filtered water for at least 4 hours, or preferably overnight.
2Drain the soaked glutinous rice completely. Steam the glutinous rice in a steamer basket lined with a clean cloth for 40-50 minutes, or until the grains are translucent and tender. Avoid overcooking.
3Spread the steamed glutinous rice thinly on a large, clean tray or sterile surface. Allow it to cool completely to room temperature (around 20-25°C). This is crucial to prevent unwanted bacteria growth.
