1To prepare the filling, heat a wok over medium heat with a small amount of cooking oil. Add the minced Ginger and minced Garlic and stir-fry until fragrant, about 30 seconds.
2Add the diced Cooked Char Siu to the wok. Stir in the Oyster Sauce, Hoisin Sauce, Light Soy Sauce, Shaoxing Wine, 20 grams of Granulated Sugar, and 100 grams of Water. Bring the mixture to a simmer.
3In a small bowl, whisk 10 grams of Cornstarch with 20 grams of Water to create a slurry. Pour the Cornstarch slurry into the simmering filling, stirring constantly until the sauce thickens.
